WGAN Farms sources directly from farming communities in Andhra Pradesh, Telangana, Tamil Nadu, and Karnataka — no intermediaries, no bulk aggregators. The chillies are sun-dried using traditional open-air methods, which preserves the natural oils, colour pigments, and flavour compounds that high-heat machine-drying destroys. Supermarket chillies typically come from anonymous bulk sources and are machine-processed for speed, not quality.

Are WGAN Farms chillies natural and free from additives?

Yes. All WGAN Farms products are completely natural — no artificial colour, no preservatives, no fillers, no chemical processing of any kind. The only inputs are the chilli itself, sunlight, and time. What is in the packet is exactly what left the farm.

What chilli varieties does WGAN Farms supply?

What is Guntur Sannam chilli and why is it valued?

Guntur Sannam is a specific chilli variety grown in the Guntur district of Andhra Pradesh. The region's deep red soil, intense heat, and dry climate produce chillies with high capsaicin content, dense colour pigment (ASTA value), and a forward, complex flavour. It is one of the most traded chilli varieties in India and the most requested for export — and the primary variety we source.

How do I identify a quality dried red chilli?

A quality dried red chilli has a deep, consistent red colour (not pale orange or brownish), a firm but not brittle texture, and a sharp, strong aroma when opened. The skin should be intact and slightly flexible — not paper-dry or crumbling. Faded colour, a flat or dusty smell, excessive powder at the bottom of the bag, or visible surface mould are all signs of poor quality, incorrect drying, or old stock.

Why does sun-drying matter — can't you just dry it faster?

The active compounds in a chilli — the oils that carry flavour, the carotenoids that give colour, and the capsaicinoids that deliver heat — are sensitive to temperature. Industrial dryers use forced hot air at 60–90°C, which breaks down these compounds before the moisture is fully removed. Sun-drying at ambient temperature over 5–10 days allows the moisture to leave slowly while the active compounds concentrate. The result is a measurably richer, more aromatic chilli.

Where exactly are your chillies sourced from?

Each variety comes from its natural growing region: Guntur and Teja chillies from Andhra Pradesh, Byadgi from Karnataka, Warangal and Khammam varieties from Telangana. We work directly with farming communities in these regions — visiting fields during harvest windows, not buying from anonymous aggregators.

What is the difference between Guntur Sannam and Teja chillies?

Both are from Andhra Pradesh but serve different purposes. Guntur Sannam has a high ASTA colour value and strong heat — ideal for spice blends, curries, and export. Teja has the highest capsaicin content of our range and is the hottest variety we stock — preferred where intense heat is the primary requirement. Sannam is the more balanced, versatile option.

What is Byadgi chilli and when should I use it?

Byadgi chilli is grown in Karnataka and is specifically valued for its exceptional colour rather than heat. It produces a vivid, deep red in curries and gravies while adding mild, subtle warmth. It is commonly used alongside Guntur chillies to achieve both visual vibrancy and heat balance in dishes like tandoori preparations and Chettinad curries.

Which variety should I choose if I want flavour without too much heat?

Byadgi whole chillies are the best choice for maximum colour with minimal heat. For a balance of moderate heat and full flavour, Guntur Sannam is the standard recommendation. Teja is for those who specifically want high heat intensity.

How should I store dried red chillies after purchase?

Store in a cool, dry, airtight container away from direct light, heat, and humidity. Avoid the shelf above or beside the stove — the temperature fluctuations degrade both colour and flavour rapidly. Properly stored whole dried chillies retain their quality for 6 to 12 months after opening.

Is payment secure on your website?
